PANCETTA AFFUMICATA WRAPPED FIGS
What you will need (for 2 people)

2 ea Fresh Figs

2 slices Salumi Pancetta Affumicata

2 tspns Gorgonzola Cheese

– Parsley, Chopped

 

Directions
Slice the top third off the fig and set aside. Wrap the bottom portion of the fig in the pancetta. Fill the centre with the gorgonzola. Place the figs and lids on a tray into a 200oC oven for 10 mins. To finish, sprinkle with freshly chopped parsley.

 

‘NDUJA CIABATTA AND GRILLED MOZZARELLA
What you will need

1 slice Ciabatta

2 tblspns Salumi ‘NDuja

2 slices Mozzarella Cheese, 1cm thick

2 tspns Olive Oil

– Basil Leaves

 

Directions
Drizzle the ciabatta with 1 tspn of olive oil and lightly toast under the grill. Spread the toasted ciabatta with ‘NDuja. Heat a pan with the remaining olive oil and fry the mozzarella on each side until golden. Place the mozzarella on the ciabatta and garnish with basil leaves.

 

SALAMI CLASSICO HORSERADISH CONES
What you will need

4 slices Salumi Salami Classico

1 tblspn Cream Cheese

1 tspn Horseradish Cream

1 tspn Parsley, Chopped

 

Directions
Combine the cream cheese, horseradish cream and parsley in a bowl, season to taste. Fold the Salame Classico into a cone shape. Fill the cones with the horseradish cream using a piping bag.

 

LONZA, PARMESAN, FENNEL AND PEAR SALAD
What you will need

½ ea Pear, Finely Sliced

½ ea Small Fennel Bulb, Finely Sliced

¼ ea Small Red Onion, Finely Sliced

1 tblspn Parmesan Cheese, Shaved

½ ea Lemon, Juiced

2 tblspns Olive Oil

1 ea Pecan Nut, Finely Chopped

Fennel Springs

 

Directions
Combine the finely sliced fennel, pear and red onion in a bowl with the parmesan, Lonza, lemon juice and olive oil and season to taste. To finish, sprinkle the salad with chopped pecan nuts and garnish with fennel sprigs.

 

BRESAOLA, PECORINO AND ROCKET
What you will need

8 slices Salumi Bresaola

2 tblspns Rocket

1 tblspn Pecorino Cheese, Shaved

2 tspns Olive Oil

Pepper, Cracked

 

Directions
Toss the rocket in 1 tspn of olive oil and lightly season. Place the Bresaola slices on the plate and drizzle with the remaining olive oil and cracked pepper. Top with rocket and finish with the shaved pecorino.
